The Grimmburger food truck is closing and making way for a restaurant in Wilmington, North Carolina

Matt and Sammie Jo Grimm say their popular Grimmburger food truck has had a good run. For the past three years, they’ve churned out delicious burgers at local breweries and festivals — all while capitalizing on their last name with macabre branding. But now they plan to reap the success they’ve sown.

“We thought if we wanted to grow, we needed more space,” said Matt Grimm.

For several months, they’ve been planning to open a store at 1113 Military Cutoff Road in the former Epic Food Co. location at The Forum shopping center. The Grimms have announced that the last day of their food truck era will be August 31 at Mad Mole Brewing in Wilmington.

Currently, the food truck’s menu includes four burgers (including the Carolina Reaper and Gravedigger) and three sides, as well as occasional specials. Some of the most popular dishes will return at the food truck’s final appearances at places like Wilmington Brewing Company and Broomtail Brewing.

They then hope to be able to quickly put the finishing touches on the restaurant and open it in September.

“Assuming everything goes well,” said Grimm.

Mural artist Lauren George of Nouveau Creative is creating appropriately spooky wall art. The Grimms will set up their restaurant equipment and create indoor and outdoor seating areas. And they will complete a menu expansion that will be unveiled at the restaurant’s opening.

“There will also be a cool selection of draft beer,” Grimm said, mostly local and regional beers, as well as wine and non-alcoholic options. He also promises there will be an “amazing communal dessert” made with the help of another local business.
