FOX 4 gives you a behind-the-scenes look at the Slipaway Food Truck project

CAPE CORAL, Fla. – If you drive along the Cape Coral Parkway, you may have noticed a large blue fence, but you may not yet be able to fully see what is going on behind it…

Cape Coral Community Correspondent Bella Line works in her community every day and gave us a behind-the-scenes look at the highly anticipated Slipaway Food Truck Park & ​​Marina project.

“We’re just excited that 3.1 acres of waterfront property is rare in today’s world, so we’re really excited to have that connection and have it in Cape Coral,” said Gary Aubuchon, a partner at Slipaway.

“When we get to the point where the roof goes on the main bar pavilion in about two to three months, commuters will be able to see it over the fence,” Aubuchon said.

Aubuchon says they also selected 8 of their 10 permanent food trucks.

He says there were about 140 applicants from local vendors who were selected based on affordability, service and food quality.

“While we expect to provide an upscale experience, we also want to make sure it is accessible to everyone,” Aubuchon said.

Given the difficult economic situation, Aubuchon wanted to make sure everyone could enjoy this first food truck park on the Cape. But as with any project, there were challenges.

“One of the things we are currently waiting for is the final release of our approvals for our document, which we have been working on for more than a year,” Aubuchon said.

He says the plan had to evolve over time.

“In addition to our 300 permanent seats, we expect to be able to add a few hundred more seats for special events and particularly busy times,” Aubuchon said.

Aubuchon said the project should be completed by next spring. FOX 4 will keep you updated on all the new projects in your community.
